Moroccan fish tagine for chronic kidney disease

If you suffer from kidney failure, you can eat Moroccan tagine prepared with fish. Here’s how to prepare it:

Ingredients
1/4 kilo of fish (flagfish or cod fish)
1 medium onion
1 Carrot
1 Red or green pepper,
1 small tomato
1 Half a teaspoon of ginger
1/4 teaspoon of black pepper
teaspoon paprika
½ cup olive oil
1/2 lemon juice
3 cloves garlic, minced
1/2 teaspoon turmeric
½ cup chopped fresh coriander
½ cup fresh chopped parsley

Directions

Marinade
Mix ginger, black pepper,teaspoon paprika, ½ cup olive oil, lemon juice, garlic, turmeric
½ cup chopped fresh coriander, ½ cup fresh chopped parsley n a large glass or ceramic bowl. Add cod and mix well. Cover and marinate in the refrigerator for 1 hour.
Tagine
Heat 1 tablespoon olive oil in a tagine. Layer onion rings, carrot slices , and potato slices in the pot in that order. Remove fish from marinade and spread evenly over potatoes. Cover fish with green bell pepper rings and tomato strips. Sprinkle 1/4 cup cilantro on top. Pour marinade over cilantro.
Cover pot tightly and cook over low heat until potatoes are tender and cod flakes easily with a fork, about 1 hour.
